squash fajitas!!! yum

most of you know that i'm not much of a meat eater...so finding yummy new recipes as a vegetarian can be really tricky. but meat eaters and non, this healthy recipe will be a highly requested meal for dinner once you and your loved ones give it a try.
ingredients
1 tbl. olive oil
1 yellow squash sliced
1 can corn (drained)
1/2 white onion thinly chopped
1 can chopped green chilies
1/2 cup shredded cheddar cheese
1 tbl. flour
3/4c heavy cream or plan yogart (i just use the milk we have on hand and it works just fine...healthier too)
flour/wheat tortillas
optional for the meat eaters:
4 chicken breasts
fajita seasoning
clean chicken and cut into small chunks, cook over medium heat with 1 tbl. olive oil. season as desired with salt, pepper, or a ready made fajita seasoning packet.
directions
in a small pan medium heat add olive oil. once pan is hot add onions, cook until tender and slightly brown. then add squash, remain on medium heat until tender, add drained corn, and chilies. stir well remove to low heat and set aside. to make the creamy sauce add milk to small pan on medium heat, when bubbling occurs lower heat and add flour, stir frequently to remove clumps then add cheese. stir frequently and allow cheese to melt completely, then pour over squash and corn mixture. ready to serve over flour/wheat tortilla and fajita seasoned chicken if desired....eat it up and let me know what you think.

wrapping paper

so just in time for the holiday season...or maybe a little too late.
i'm sure like most of you i hate seeing my hard earned dollar spent on wrapping paper..its such a waste. (hence the closet full of gift bags i can re-use) newspaper isn't colorful and also leaves that black ink on everything so i use magazines. i grab a couple of my favorite magazines that i've finished reading
and i tare out the pages that i think look cool.
then i tape them together and make my own wrapping paper.
its super simple and it looks really awesome when you are done.
best of all you are re-using something, and also the wrapping paper is especially made from you, expressing a piece of your passion from the things you read whether its golf, running,or baby magazines, this gift is now wrapped with your special touch.
i'm often asked where i got such cool wrapping paper
....little do people know its from the pile of magazines on my bed room floor.:)

heal walking

heal walks.
thats right heal walks. no this doesn't mean walk in your high heals all day, it means to literally walk on the heals of your foot whenever you can. why?? because heal walking actually stretches the calf muscles and strengths them.
by stretching and strengthening them all at the same time you will decrease the dreaded plague of shin splints. try heal walking as you are up getting the laundry, chasing a kid, or walking to the couch (if that ever happens) and let me know what you think.
